Which is more influential on a son, the mother or the father?

I would say "strong fathers!"

With no Father around, it would, of course be the Mother. According to God, a Father is head of the family, spiritually. The question is kind of loaded in that dominance is a personal judgment. Some would suggest that anyone that insists on having their way, just once, is being dominant! A few societies let the Mother be totally in control, which can remove a Fathers ability to lead or give enough input into their children's life. If a man has what could be suggested as having a forceful intellect, it would be the Father. If the Mother has this, then the Mother. This means that people have a tendency to listen to them and some call this simply, charisma or a charismatic personality. Even if some are wrong, people may not object or even suggest what they said is true! It can be to such an extent as to have some deny 1+1 is 2, without getting into metaphysics! Some suggest that this much ability to move people is demonic in nature. This can be true, according to the Bible. An example is Jezebel and today some speak of a Jezebel Spirit that effects men as well as women. According to end time prophecy, there is coming a leader that will have great people moving ability, even more than Jesus Christ and it will be soon.
