many times when i was little, they always let the kids go up into the cockpit!

Yes. I used to work for Boeing, and at times it was necessary for me to visit the production line. I've been in a cockpit of aircraft at various stages of production, sometimes before the seats and avionics were completely installed. I've also been in the cockpit of working aircraft which came back to the facility for various retro-fits.

Nope, but flew in an Army helicopter with the doors open. I just about fainted--hate heights.
