I'm thinking of buying a Karcher vacuum cleaner. Which model works best? Bags or water?

I used to have a Rainbow that used water. It cleaned well, and was good for when I cleaned the whole house, but it was a pain for small jobs, or a quick once over. You have to clean out the water reservoir after each use. And that can be another mess to deal with. You can't let the machine sit on top of the water when not in use, so you can't just push it back into the closet til later. If you get the water model, keep your old vac for those quick jobs.
