pH can be determined using a calibrated meter or pH paper or by titration, for example when determining alkalinity.
Turbidity is generally determined used a NTU meter. It is measured in Nephlometric Turbidity Units. For example muddy river water might be 500 NTU. The water you drink at the tap can be no more than .3 NTU. You cannot realiably see NTU values lower than about 20 NTU with your eyes, hence the meter.
Heavy metals are detected using atomic absorbtion, but there are meters which can detect larger amounts.
Minerals such as calcium hardness are determined using titration.
Total dissolved solids are determined using evaporation of the filtered water to remove the total suspended solids first.
