While I've never worked in a seafood market, I do know that I cooked so much sirloin, prime rib, and filets that I don't care if I ever have beef again.
So it might work the same for a seafood place.

Yes indeed, they can stand to eat it. But most prefer to sit. There are a small percentage who lay down while consuming crab or squat while chowing on flounder. But most do it just for the halibut.

The same question would also apply to burger shops, donut shops, vegetable shops, butcher shops....I am thinking that they can, don't you? And they would know the better cuts or species of fish to have.
