Should I write a personal than you note to each faculty member I met with, or only the ones I am most interested in working with? Also, if I do write 8 different emails, do I need to tailor each one to that particular interview, or can I make it a sort of form thank you email?

i've never heard of anyone writing thank you notes for that. Would you write a thank you note to a potential employer after an interview. I don't know, but I think it would come across as strange at best.
