But...in order to have the effects stated in the first one above you need to have made it from scratch.
It says:
"So Rennard's wife Barbara Rennard made up a batch of her grandmother's chicken soup, which includes chicken, onions, sweet potato, parsnips, turnips, carrots, celery stems, and parsley. Rennard said his wife added no salt but did include matzo balls, a kind of dumpling."
After testing those ingredients they came to that conclusion.
So best results are a GOOD home-made soup.
However basic chicken soup, whether canned, powdered or whatever, helps regardless, because the steam and salt open up, disinfect and have an anti-inflammatory affect on the sinuses and throat and it's a soothing and comforting meal all of which make one feel better when they have a cold.
So eating a nice hot bowl of chicken soup during a cold certainly is soothing and beneficial, but look at all the other nutrients you get from a good home-made batch too, all of which do a body good! Soups rule don't they?

Since the ingredients are well cooked, its easy to digest. Often real chicken stock is made from chicken bones boiled in water which released the nurtients in the bones. Chicken meat is easy to digest and provided protein. The vegetables provide vitamins and minerals. Any herbs addes will increase the value of the soup. And if noodles are added your get carbohydrates. The fats in the chicken give saturated oils. And chicken soup is usually salty so your need to drink water afterwards. Lots of nutrients that are easy to digest.

Chicken soup and many of its ingredients help stop the movement of neutrophils -- white blood cells that eat up bacteria and cellular debris and which are released in great numbers by viral infections like colds.
Neutrophil activity can stimulate the release of mucous, which may be the cause of the coughs and stuffy nose caused by upper respiratory infections such as colds.
