Since this is in the reptile section, I'll say let a really big snake loose in the restaurant. Rodent problem solved. Now, how to catch the snake?

First of all, make sure all floors are clean and free of debris at all times, even under shelves and in all hiding places. You need to eliminate all food sources for the pest. Next set up traps. If you are using traps that keep the rat alive you must kill the animal and not just let him free. he will find a way back in. Also call an exterminator because there is probably more than one and the exterminator will help you find their access points in your restaurant so you can prevent more from going in.

I would hire an exterminator. If the health department came down and saw a couple of traps that you lay down yourself, they may think youre not trying hard enough.

There are large rat traps you can buy cheap at a Dollar Store. Exterminators are expensive.
