Salt, Pepper, and GARLIC! Yum!
Also, we use this Montreal Steak Seasoning rub by McCormick when we're going to do a roast on the rotisserie. It's AWESOME!

it depends on the meat that I make, steak I usually poke holes in it and throw soy sauce on it and garlic. and it comes out nice and tender.
