Genes basically have all the information to tell the cells what to do and how to function your body. Genes are found in the DNA and encodes for many many things, from your physical appearance to the production of proteins and so on. They are the "masters; they control what happens to your body.

All the above are correct. However, the short answer is the genes are what makes you you. They determine all the factors that make your build, appearance, internal and external structure, and even a great deal of you personality. They are a combination of both parents, and no they can't be changed post birth.
