ummm.....the growth of civilization like how we have grown from small farms to huge cities!
that would be an easy project just write a report on how like all the immigrants came to America and how we , as a country have grown, and then cut and paste some pictures of Ellis Island, where all the immigrants came in mostly, and farms and then huge cities!
and well you get the idea........
Hope This Helps! :)

Yes, I didn't like history either so I always chose different things that were in history besides the wars. There are many interesting things that you can do for your history fair project. It is hard to tell you exactly what to do because we don't know what the specifications by your teacher. That would help to give better ideas of what you are allowed to do.
Suggestion:In Japanese writing you can compare the differences between how the nobles and the peasants wrote poetry or how they chose to wear clothes (japanese books always have accurate information about the times clothing). Or you can do it on a foreign country and its historical event. Maybe how the fashion industry has changed from the 1800's to today. Um, maybe a project about the difference between Knights and samurai (like how they treated woman, how they lived their lives, how they were preceived by the peasants, and etc). But, if none of these sound good, then just pick something from your book that you have studied and write about that topic. Good Luck! Hope the teacher doesn't eat you alive!

I'm guessing you're working on US history because you're in 8th grade?
There's more than wars in history. There's the writing of the Declaration of Independence, Louisiana Purchase, Lewis&Clark, Indian removal, the slave system, Great Depression, Gold Rush(es), etc.

Greece!
I swear you would love it, ancient greece is the best.
It can be about there art, plays (tragedys), architecture, science
theres also science about what is beautiful! its awsome, it might be greek, im not sure but you can mesure your face and stuf to tell if you qualitfy as "greece beauty" or what ever, its wicked fun, you could do something on that.
Ancient japan is also awsome, I made a kimono as one of my projects and made scrolls of japanese writing
If theres someone you love, look up to, preferably dead (haha) that would be good.
But I told you ancient civilizations like greece and japan cuz your teachers will be proud of you wanting to do that stuf, and ive studdied some of this so if you need info you can email me (blutiger.herbst@yahoo.com)

Can you do a topic on anything you like? I.e., can it be on a person? If so, there were lots of interesting rulers. Eleanor of Aquitaine comes to mind.
