I like mine without skin. It has to be a good sized cucumber though.

Cucumber is great - I like to think that, along with tomato and lettuce, it forms the basics of a salad... I personally prefer it with the skin.
For any other application I'd suggest you leave the skin on and maybe apply additional layers. :oP

Without the skin, sliced, mixed with some tomatoes, and onions in a white vinegar. or an Italian dressing.

Well...I like them as pickles.....I like them with or without the skin but sliced about 1/4 inch thick and sprinkled with some salt :)
