(Being in the psych section I figure the maturity of this question would not pose a problem.)
I am a 30yo gay male (in case that is relevant)

I have my fair share of adult-themed dreams but have noticed that I always, and mean always wake up before their is an "ending." Is this normal for these type of dreams to never finish, and any logical reasoning behind such dreams?

To understand a dream, it’s helpful to keep in mind why and how we dream. When we sleep, the body and perception systems are shut down, but the brain remains active. The brain thinks about what has recently been most active during waking hours—experiences, thoughts and feelings accessed recently whether consciously or not. The brain is still active, so it works on this content, but not in a familiar, rational way. During sleep, this material is not related using input from the external real world, but rather by the brain connections already established in the cortex. So the story connectedness isn’t like everyday experience, but rather a strange, circuitous flow from one image to the next. So dreams aren’t magical messages to guide our life, but dream imagery is taken from everyday experiences, thoughts and feelings that matter most to us during our waking life. So it’s a mistake to apply standard symbol definitions, such as Freudian meanings or standard “dreammoods” symbols. All you need to do is think about what kind of imagery it is and how it relates to your daily life.

You seem to be talking about sexual dreams in which you characteristically do not dream to climax, right? It's a valid question, because wouldn't it be nice if you did, and sort of frustrating if you almost never do?

It may be that in real life, you are more thoughtful and deliberate about sex, proceed cautiously in relationships, do not move forward quickly and easily towards sexual intimacy and sexual fulfillment. Not that this is a bad thing. In real life, intimacy is best in relationships in which trust is earned, way beyond aacquaintances and causual friendship.

Being gay or otherwise has no relevence you were right.

Dreams that have no ending are usually indicitave that the dreamer does not want a conclusion that they have a fear of things ending.

Lots of dreams don't have logial ending like movies, but they have shifts from scenes, almost like trailers to the movie. But if there is no clue to an outcome then you have a problem with the outcome so will avoid writing it into the script of the dream
