Try industrial supply house.Depends where you are from, but here in mid west (USA) we have " Grainger" and others. Look in your local phone book.

By clevis hitch I guess you mean an eye in each end where you could attach a clevis hitch. Wire rope of aircraft grade would be 'very' expensive, but plastic coated wire rope is available that should be quite adequate for anchoring outdoor buildings. That's available in quantity at places like costco or home depot, but it would be in large rolls

Most logging or mairne supply companies would cut it and put eyes on each end. There are a couple of ways to put in the eyes. They can be spliced in (time consuming and more expensive) or clamped (cheaper and still very strong).

If you'd like to contract this out, let me know at eldenwalden@yahoo.com

Defender Industries is an excellent answer; also, go to "Boats and Harbors", the monthly magazine for big ship / tow boat stuff...there are at least three companies there that wouldnt even turn a hair at doing 7,000 x 50 feet a year with eyes Nico pressed on each end....get galvanized wire by the way, and the type your looking for is called 7 x 19 ( as opposed to 1x 19 stainless)

West Marine carries it.
Defender does also, probably for less.
Both can swedge on the clevis hitch, or mechanically attach one
West calls the ends fork terminals
