The Roman Empire began to be established about 200BC when Rome conquered Carthage in North Africa, following the subjugation of the cities and towns of Italy. Next came the conquest of Greece about 150 B.C.The completion of the Roman Empire was when Octavius Caesar Augustus recommended in in his last will and testament that the Roman Empire limit itself to the Rhine and Danube in the North, the Tigris ands Euphrates in the East, North Africa, and Britain.

The "establishment" of the middle ages came with the waning of the Roman administration in Western Europe. Government: A good year to end the Roman Empire is AD 476 (why not?) The Eastern Emperor was not able to make his writ run in Europe. There was no longer a bureaucracy collecting taxes to support a government. Since Aetius defeated Atilla in AD 454, there was no Roman army. In AD 490, the Eastern Emperor Athanasius handed the government of Italy to Theodoric, King of the Ostrogoths, as his viceroy.

In economics, you must go to Henri Pirenne. "Mohammed & Charlemagne" will tell you that there were Syrian merchants in Marseilles, France in AD 600. And there was still trade in gold. In ecomomics, Pirenne argues that the islamic closure of the Mediterranean shifted economic power North to Frankland.

For culture, intellectual pursuits, and entertainment, you will have to go to Joseph Dill, "Roman Society in the Last Century of the Western Empire." It's a cheap paperback.

The middle ages was not an "empire." It was a time period in the past. I'll take pity on you and throw out some terms for you to look up: Patron Client system... Feudalism... Land Baron... Peasant...Emperor... King... Vassel... Have Fun!!
