Sky has snapped up boxing and most football/golf, turning them into "smaller events", with lower UK viewing audiences. But it's still profitable for them to do so.

The NFL contracts the broadcast rights by contract, often for several years at a time. Part of the negotiating point is the audience the broadcaster can reach, and SKY doesn't have enough subscribers to meet the demand. In a related point, the contracting broadcaster has to pay *A LOT* - usually, but not always, the contract goes to the highest bidder. Since SKY has fewer viewers, it can't charge as much for advertising, so cannot come up with the funds to contract for the show. They can't get MLB contracts for the same reason.

Because it would be a far smaller event if fewer people were to see it and advertisers would pay less for spots.
