Mmmm, edam is so good.
I'd have to say cheddar cheese. I know it's really boring, but Camonbert is too soft and the whole house would topple over.
Maybe I'd throw a little edam in there for fun. I had the best edam cheese in Holland, and aaaaaaaah.... pure cheese nirvana.

Parmesan, for the main structure, very hard, but you'd need a lot of windows to let the air circulate! Probably waxy edam for the roof, the wax would keep the place dry.

a lovely mature stilton...it'll keep the kids out and there for my home would look like a home rather than a bomb site.. Also I wouldn't need to re decorate too often as the walls would change colour as the house gets older.!
