I havn't watched American Football since the fridge was in the Superbowl (sometime in the 80's, I think)

I have forgotten all the rules and how it is played.

Anyone know of any sites with a good beginners guide out there?

No-wait. Google.com is actually a better engine to use. go to google.com and type in "a website that teaches football" and there are TONS of sites that spell it out for you.
I only started watching football in 1997 but at least I can say I've seen Marino, Elway, a bit of Montana, Aikman, Sanders and Jerry Rice. I learned by buying a copy of "A Woman's Guide To Understanding Football" from the nearest sports shop. I'm still learning everyday but it is definitely worth it. I'm glad you are interested. Please be an Oakland Raider fan!! We can use the help. GO RAIDERS!!!!

http://en.wikipedia.org/wiki/American_football will knock the cobwebs away but this season the big rule is "intentional grounding" where the QB throws the ball away before getting sacked (aka clobbered). Apparently a Safety i.e. 2 points for the QB sacked in the end zone is still valid if the QB intentionally grounds the ball to avoid hospitalisation. Wusses,lol
