This is normal, and perfectly fine. Higher idle at start up , the engine needs more oil when cold to protect parts. Most wear occurs at start up and at idle speeds because the valve springs are at their highest pressure at low rpms. You'll notice the oil pressure goes up while your driving , then goes back to a lower psi as you come to a stop. Engine and oil pump are working fine.

Change to a 5-20W oil. IF the overnight temps are sub-zero, ie......-25 to -40, get a block heater.
Both of my cars have over 150K miles and I use a 5-20W oil all year and even with the -18 temps over the last several weeks, I see high oil pressure for a few minutes while the vehicle warms up. a 10-30W oil is usually to thick for most areas were overnight temps can dip to -20 or -30. So change the oil, you may even need to use a 5-15W if available.

When the oil is cold it will have more pressure until it warms up and flows better, as long as it stays in the normal when it's warm don't worry about it.

that is a good thing , thick oil will have higher pressure , 5w40 synthetic is an awesome year round oil , NEVER put gear lube in your crankcase , those 300 6's were a great motor , keep your oil , air and fuel clean and it should last until we run out of gasoline.

It sounds pretty normal but you should be using multigrade oil in cold weather. Use a 5w30 or even 0w30 (or 5wXX) because if flows better in the cold and is not as thick when it is cold but is the same viscosity when hot.

do an oil change, and see if it is still high reading wise.. It has been known, that to quiet down an engine making noise, was to add a quart of 80-90 wieght gear oil.
Sinse gear lube is heavy, It would cause high oil pressures till the oil got hot.
If an oil change and filter does not solve the problem, you could drain out the oil, drop the pan and adjust the oil pump, or live with the problem, keeping an eye poen for gaskets buldging

I had one of these 300/6 and I liked it. I don't believe you have a problem at all.
