If extremely high quality isn't an issue, do this:

put the phone on speaker, and put a computer mic next to it, and use windows' built-in sound recorder to record the call.

I don't know how you could use your PC, but I do know that you can purchase a fairly inexpensive unit at Radio Shack that connects to the phone jack and a conventional tape recorder. You put it on a "voice activated" setting so that it only operates while the phone is in use and it can be easily hidden, as well. It will keep a very good archive of all incoming and outgoing phone converstations.
