Daily (at end of shift):
Collect beer mats & ashtrays, wipe over tables.
Clean and dry ashtrays and stack with beer mats ready to be used next day.
Wash, dry and put away all dirty glasses.
Wash and dry nozzles from taps and all drip trays. And replace them.
Empty slops bucket.
Wipe bar preferably with anti-bac cleaner.
Clean sink and surfaces behind bar.
Sweep and mop floor behind bar.
Weekly (during quiet periods ):
Rotate bottles and clean shelves
Polish mirrors/windows
Clean fridges
I would not include cleaning pipes as part of general housekeeping for bar staff

cleaning optics
mopping floor
cleaning glasswasher (if brush based need to soak brushes overnight
cleaning sinks
cleaning bar surface
ensuring all food surfaces, chopping boards and utensils are kept clean
Cleaning the coffee machine
coke dispensers need taken apart and cleaned (nozzles)
Periodically check the ice maker for blocked water outlet
A lot of the stuff like polishing etc can be done in slack hours to keep the staff busy. Nozzles and lines etc need to be done when there are no clients

All good suggestions. One place I worked at would dump hot water in the ice bins once a month to get rid of the ice and clean them out to make sure there is no debris in the ice. Thye wanted to make sure that in a busy time when the ice gets low they didn't serve any drinks with something nasty in it.
You would be surprised at how much stuff winds up in an ice bin over the course of a month.

Don't forget to clean the pipes. At least once a week.
I wish they did it more often in our local club, the beer tastes poor. Had to drink Guinness the other week it was so bad. I am not looking forward to the day I have to resort to drinking [grimaces] Lager.
