Martin Luther King Jr. is usually pretty interesting to kids that age. Try it, but make it fun. Don't bore them with it or they won't learn. Also try Rosa Parks.

Different foods...
What you could do is to show that people should not stick to one culture or assume that everying in their culutre is good.
Ie hindua have nice food, bollywood films, lots of colour, but the caste system is unfair and bad...
In the UK we have it pretty equal for women but drink too much...
So how about your kids come up with a super culture taking the good bits from all the relgions and cultures and ditching all the nasty stuff like forced marriages, castes systems, foot binding, stoning, getting overly drunk, fox hunting etc.
Or why its not good to do something simply as its part of a culture or always been done.
But to decide on if something is right on the basis of if its fair, or nice.
Like borhters getting to boss around sisters is bad but bangra music is good.
or things along those lines.
Or morality in relgion...
ie say take stealing...
normally its bad but what if a child broght in a crossbow he brought at a car boot sale fully loaded...
Should the teacher obey the commandments and let the kid keep it in school. Or take it with no intention of giving it back (ie stealing) as in the end its a better thing to do so nobody gets shot?
Whilst mugging somone for their mobile phone is bad...
Ie all based around themes of judging whats good or bad not due to relgious, cultural or tradition rules.
But looking at the circumstances and judging whats the best thing in the end

You can ask them to do a project on different kinds of food which is eaten in different cultures and the significance of it, IE; who cannot eat pork, how is Kosher meat different than ordinary meat. This gives the kids the knowledge of different countries and cultures with religion mixed in
