oooh i love shrimps deep fried in batter!
my mom would stick a wooden skewer through them then in her special batter and straight to the wok!
mmmmm.....
and do not overcook 'em!

There is no way t prevent them from curling.I think they curl up so they can keep their batter from coming off during frying......Love Me Some Shrimp.......

Stick a straight stick/rod from the front end to the tail end making sure it's as straight as you would like it to be when it comes out of the fryer.

Use a wood skewer for the kabobing top to bottom. That should work.

You can butterfly them. That should keep them from curling.
