Dodger Stadium had an organist until sometime in the late 90's.
When the stadium opened in 1962 Bob Mitchell was the organist. Shortly thereafter he was replaced by Helen Dell, who played well past the end of Koufax's career in 1966.
While Ms. Dell often had certain tunes she would play during certain events during a game, I don't recall her as playing a particular song for a particular player on a consistent basis. I do remember her playing Gershwin's S'Wonderful on occasion as Koufax would throw his final tosses before the game started but she did not do this every time.

Back in the 1960's baseball was more about baseball than the showbiz stuff going on now. No player had a special song when the approached the mound or the batter's box. The opponents would have drilled them with a pitch for doing something like that to show them up.

Playing music when a home batter comes to the plate or when the home pitcher takes the mound is a new phenomenon. No way the Dodgers were doing that in the early to mid 60s.

I doubt they played anything special. Back in Koufax's time they didn't play amplified pre-recorded music at the game. Most stadiums had a organ player, but he/she didn't play songs for individual players.
