Adding water to the vase will prolong the time the leaves will remain flexible and retain more of the essential oils that many find pleasant. Under normal circumstances, you can leave them without water and the Eucalyptus branches will slowly dry, and as the oils evaporate, the aroma will diminish and some color will fade. They will never look like the ones you buy in a crafts shop, as those are treated, usually infused with colorant.
