A good waiter in a 5 star hotel must have
1.Good Grooming
that is Personal cleanliness clean body, clean teeth, no fowl smell, clean clothes, clean nails, clean shoes and clean hair.
2. Good manners.
a smiling face, polite remarks like thank you and excuse me.
must know when to hold the chair for you and when to give you the napkeen.
3. Should be able to balance the dishes in his hand well.
4. Should know table manners.
When to remove the plate and when to keep the water and where to keep it. How to serve the guests from which side of the guest.
5. Should know disaster management
In case a guest is rude if the food has some problem, how to deal with the crisis without making fuss and without other customers taking notice.
How to behave when some dish breaks and the food spills on the table or the guest.
6. He should be very discreet,
Many guests come with their girl friends, he should never recognise them behave normal.
he should not look under the table.
7. He should know more than one language.
8. He should know what is the meaning of the dishes on the menu card. Sometimes these diShes are Italian or French, or other, he should have the basic knowledge what the ingredients are and how it is cooked.
9. He should have the ease of making his guests comfortable. They pay exrta to come to a 5 star so they expect a 5 star treatment.
Above all. He should be EDUCATED.

A good waiter will carry enough for you to notice that you've experienced good customer service, you were treated with respect & felt your whole dining experience at the restaurant was enough for you to know that you will come back again in the future. Over all the miscellaneous "things" carried by a waiter in a star hotel, i think that the most important & only thing should be PROFESSIONALISM.

My family and i were recently served by a waiter whom we rated "top knotch". He didn't need a pen & paper to write down our orders. For a party of 7. He remembered it at the top of his head without writing it down. There were no errors at all. He was friendly, professional & most of all funny. A good sense of humor usually ends up getting GOOD TIPS.

I don't think he should be labeled as different from a normal restaurant, although a waiter in a star hotel. I think it's any waiters/waitresses job to be professional regardless what type of restaurant it is. It's their job to do that, it's part of the business. Good customer service BRINGS CUSTOMERS BACK. That's how they succeed in business. It depends on the management. If they care enough to train their waiters/waitresses to be professional means they care about their business & care about the customers experience.

When I was head waiter at the "Fulor Son Jounes" restaurant in Paris, France, I was never without my Leatherman 3723. With this device, I was able to open champagne bottles, filet fish, repair broken eyeglasses, resole a shoe, reset a broken bone, pluck unwanted eyebrow hairs, clip and file haggard toenails and or fingernails and execute general reconstructive surgery.

A good server will need nothing except to look VERY sharp and to have the standard tools of the trade close by. The best of them never write anything down and always get every detail correct.
