Well I know you said one person, but there are four I would really like to meet.
My grandparents, from my Mum's side (cause her Mother died when Mum was three and her Father died when Mum was 15, so I never got to meet them).
My grandparents from my Dad's side. (I did meet them when I was 6 months old, but I wasn't old enough to get know them the way I would like to now).
I think they would have some very interesting stories to tell.
