You don't find nitrate rich soil, you create it. One method (and this is serious) is if you know someone or yourself (if a small area) you can spread gunpowder around in a whirlybird, or hand fertilizer, or chicken manure which is high in nitrate but very hot so you have to till it in and give it time to plant something in it or it will burn the seeds and die.

Out of the back end of cows and horses.

It is best to let it settle in for a few months first as it not only smells badly but has more nitrates than your usual plants can handle easily.

Most dairy and horse farms have rather more of it than they can find useful and so are happy to find folks willing to cart some off.
