Star Trek is already in production, so that's a definite yes. Whether the series will extend beyond that will depend in large part on how this movie does.
Star Wars is unlikely. There is a live action TV series in the works, it is possible, though unlikely, that that series could eventually spawn a movie. Lucas has said he isn't interested, which would make it difficult. Of course, he might change his mind.

The next Star Trek is in preproduction... it will be about Kirk and Spock in the time right after they graduated from the Academy.
No Star Wars movie, but they are doing a live action tv series due to come out in 2008.

The Star Wars movies are done. Lucas has said many times that he will not do the back half trilogy. He was going to do two TV shows. One cartoon like the clone wars and there was word of a live action TV show to bridge the gap between Sith and Hope movies. He said it was not picked up by a network but would make them and release them on DVd if Necessary. Hope it comes.

Star Trek 11 is in the works now.
However, don't hold your breath for another Star Wars. It's done. Lucas said he's not interested in making anymore.

I heard they were going to try to turn the 3 original Star Wars movies into 3D, but that is just rumor right now.

I didn't really like the last three Star Wars movies, because the director was making up for having no special effects in the 70s, which resulted in me not being able to follow one bleeping thing in all that action.

The two trilogies have been completed with all of the episodes. The saga is followed up by several book series. I doubt they'll make another movie.

I doubt there will be more Sta Wars films. Although, it was originally designed as a trilogy of trilogies. Middle, Beginning and End.
