What is happening to all the 'old" 007 when the actors change. Are they retiring or did are they dead? They never explain it on the next movie with a new actor. And why are they all called 007?why not 008 009 etc.

I thought 007 is just a nickname because in the new one M asks the new Bond if he gets used to his job eith not trusting anyone etc. Thought that it is a new agent just with the same name

Couple of points here.
In the original movie series (from Dr. No to Die Another Day), it's the same character througout, just played by different actors.
007 is Bond's agent designation. The 00 designation means that the agent is licensed to kill, and there were several 00 agents that appear throughout the movie series (for instance, 009 was the agent that was killed smuggling out the fake fabergie egg at the beginning of Octopussy, Sean Bean's designation in Goldeneye was 006, etc). Can't remember the specific movie, but there was one where they did assemble all of the 00 agents and they were all seated in the minister's audience chamber.
Casino Royale is a restart to the franchise... so events in all of the previous movies don't count in continuity. As far as Casino's Bond is concerned, he's never gone against SPECTRE, Blofeld, got married, etc. There hasn't been an "M" before Judi Dench, etc.

James bond is supposed to be a late 30-erly 40 year old man so when an actor gets too old they find a new one and its still James Bond therefore still "007" the other characters just act like nothings new they try 2 down play the change as much as possible

All of the actors are playing the same character, James Bond. Since he is the same person, he is 007. The actors change because they get too old, retire, or don't want to do the part again.
