Write a basic Thesis and build with research.
Erickson's eight stages of psychosocial development are unique and revealing aspects of our social organization and each displays the complex social development from birth to death in our existence as learning, thinking and adaptive beings.
Alternately you may want to address the evaluations of the theory versus Piaget's stages of cognitive development.

I didn't find this out till grad school- but if you want to write a great paper - do this. Find what has been said against his theory- find the best argument you can find against his arguments and address them. Anyone can write about his stages of development. If you want to take your paper to the next level, mention a stage and see if you can find the best criticism on that stage, and then address that. If you do this, you will write a great paper. Good luck.
p.s. don't find only weak, easily answerable arguments to fight- find the most difficult ones.
