I know it's the title of a movie, and also the title to a song interpreted by Fionna Apple, as well as The Mars Volta. But what does it mean?

It could mean one of two things. It could mean someone who incororates the shadowboxing technique in their fighting training/ readiment regiment. It could also mean somebody who keeps fighting things that are not really there.

"Shadow Boxing" is boxing with your shadow. It is practicing boxing with someone who is not there. The term has also come to mean someone who fights an imaginary enemy.
