The castle in Disneyland, California is Sleeping Beauty's Castle, named that to advertise Disney's 'new' movie when it was built in the 1950's (Sleeping Beauty). It was based on Neuschwanstein Castle in Upper Bavaria, Germany.

The castle in Disney World, Florida is Cinderella Castle, supposedly based on French castles (or chateaux), but really an invention of Disney's designers.

The castle in Euro Disneyland, Paris is Beauty and the Beast Castle, since that movie was set in France.

Sleeping Beauty's Castle in California used to have a walk-through attraction. Guests could walk up stairs and look at the story of Sleeping Beauty - little miniature figurines which were behind glass. Then the stairs led guests back down and you emptied out right next to where you came in. But that closed in 1999.
Cinderella's Castle in Florida is home to the new Cinderella Suite and Cinderella's Royal Table - an all you can eat buffet where guests can dine with Cinderella herself and the Fairy Godmother.

It's just a building in the Magic Kingdom of DisneyLand/DisneyWorld and is supposed to be Cinderella's Castle. It has become one of most recognizable icons for Disney. It is used to have breakfast/ lunch with some of the Disney characters, especially Cinderella and the Seven Dwarfs.
