Mine didn't either---we address people by name in the Cherokee language except when we use terms of relation or respect for prominent people, so that goes for ANYONE. But yes, sir and ma'am are polite, especially if the person is older than you. Why would skin tone come into this?

Skin colour is irrelevant. Treat all people with respect. Polite address is always a good start, though it is possible to be overly formal in certain situations.
