The enzymes found in the stomach's of carnivores are designed to destroy the harmful bacteria found in the meat. Some carnivores, like the Komodo dragon, actually use the bacteria in the rancid meat they eat as a poison to kill the prey that they bite.

Silverbirch is partly right. The other half is that their stomach and intestinal acids are so potent that they kill EVERYTHING but themselves. Hyenas' stomach acids are so strong that they can digest whole bones-- that's like battery acid! I helped to rehabilitate a turkey vulture once at a wildlife rehab center, and this is what the vet told me. Something else to think about-- when vultures and condors are disturbed, they will vomit the rotting, partially digested meat as both a predator deterrent and as a means of getting off the ground quickly. When they've eaten their fill at a carcass, they're often so weigted down that they can't fly, so they literally have to sit back and digest their meal before going home. If they're startled they will vomit their meal back up to lighten the load... Really gross...
