This one (see below, please) is quite good, although it deals with a specific incident rather than conspiracy theories in general:

Debunking 9/11 Myths: Why Conspiracy Theories Can't Stand Up to the Facts (Paperback)

So many people love conspiracies - mainly, I think, because such theories satisfy a need to have puzzling,
traumatic events explained.
But, given human fallibility, there have been very few actually successful major conspiracies in the annals of history.
Usually, incidents are the result of human error, miscalculation or downright stupidity rathen than of any vast conspiracy.

See the second link for a good review of the book. Here's an excerpt:
"Debunking 9/11 Myths is an absolutely devastating, comprehensive and fully documented refutation of conspiracy theories which argue that the World Trade Center towers were brought down by controlled demolition, that something other than a Boeing 757 smashed into the Pentagon, and that United Airlines Flight 93 was either shot down by the American military or never crashed at all."

Link number 3 will connect you to an interesting article about the "Da Vinci" conspiracy
