I could until I re-read your question that you were looking for someone who is currently living. Most of my answers are people who died within the last 20 years or so.....but here are my answers anyways...
Arthur Fiedler born in Boston MA very very famous conductor of the Boston Pops and New York Philharmonic. He died in 1979.
Aaron Copeland was a famous American classical composer whose music you will recognize hearing on the "Beef, its whats for dinner" commercials. He died in 1990.
I can't think of a ballet dancer off hand though...sorry.

John Willams is a major conductor(Jaws, Jurassic Park, Star Wars, Harry Potter)
He did all of those instumental peices.
