Its to do with escaping predators in the wild, if you watch a wild life program when an animal is being hunted it usually keeps getting away until the point when it trys to turn to a side and then it gets caught. Sheep are very good at turning quickly and being nimble due to their size so they just run in a straight line with the herd.

2 most important things to know about sheep on the road-
1)sheep cant walk or run backwards
2)if they have their heads down and are eating then they wont move so keep going !!
watch out for the ones that have their heads up they are the ones that will move
Hit a sheep hard and you'll damage your car, hit one on a bike and your coming off
once one starts to move they will all follow.
