Probably NCR paper (no carbon required). Comes in 3 types
Top copy with special coating on back
Middle copy receptive coating on front, special coating on back
Bottom copy receptive coating on front.
You can use more than one middle sheet but have to use more writing pressure.
You should be able to buy it from general printers but would probably have to buy a ream (500 sheets) of each type.
There are some types which can be printed on ink-jet, laser or photocopiers but it is expensive and readily available. Accelerator is one make.
Printers use an interesting glue with NCR paper. You glue the edge of a stack of NCR sets. When the glue is dry you pick up the sets and bang the glued edge against something hard like a workbench top and the sets separate into individual glued sets
