Radishes are about the fastest to grow, 25-30 days from planting to harvest. Some mustards will grow fast as well.. Along with other greens which come up quickly, spinach is another fast grower.

Peas are another fast grower, about 40 days for some varieties to get your first pods.

Squash, when it is warm weather, will begin bearing fruits in about 45 days or so.

Tomatoes take about 80 days, Okra 60 days or more. Both need warm weather, Okra needs hot weather to do well.

Radishes germinate and grow quickly, but 2 weeks is pushing it.

Also some grasses germinate and grow quickly such as annual ryegrass.

And of course there is always chia....chia pet stuff.

depending where you live (and this is crucial ) the only veg that will grow and be ready to eat in your time frame ; is a radish .

I suspect Tomato. Certainly it's already started, whereas others, even beans are often from seed stock.
