Theoratically, is the heating/cooling curve made of a few straightlines or just a curve?

Also, is it a smooth or arbitrary (ie the curve keeps changing) curve?
(Assume that the substance is evenly heated)

A curve. There are very few, if any, "straight" lines in reality. And the curve's derivative is also a curve, and so forth.
