I think so. But I'm not sure 100% why not call your local office to see before you dash past several cameras at 190km
Have a nice trip!

In a nutshell, if you break the law in another country, then the authorities have a right to track down and prosecute the person who has made an offence, all number plates are traceable no matter from which country. Just stick to the speed limit and remember their speed limits are displayed in kph not mph so be careful when checking your speedo.

I live in South Wales and used to work for Hertz Rent a car - part of my job was to chase people who'd hired one of our cars and taken it abroad and got caught speeding or parking tickets etc. I had to chase up tickets from Belgium, Ireland, France, Germany etc.
The authorities in each country had obviously chased the car back to us in the UK.
I'm not sure whether theres a difference with you living in Ireland but they can chase up a car from the UK. Of course, if you don't reply to the ticket I'm not sure if they can do anything.

You can be done for any traffic violations in the EU served in your country of origin as can foreign drivers in the UK. One word about driving in France if I may. If a car flashes you, unlike in the UK it means he's coming through, he has right of way. This will be evident on the motorways when cars coming off the slip road will flash you to warn you to give way. Strange to think in the UK coming off the slip you have to cede to oncoming traffic.
Don't forget your spare bulbs and warning triangle, they are compulsary as is modifying your headlights.

The French Police will give you a hefty on-the-spot fine - they will take you to the nearest cashpoint and take the money then and there.

Sounds like you are planning to speed. Whichever country you are in you are bound by that country's laws.

NO!! But just because you can not be fined, does not excuse you from speeding. If you have an accident you will then be sorry!!
