What I did was make a list of all of the songs that I really like, and would want to listen to a lot. Rather than dealing with playlists, I just stuck all of my songs into one big playlist and shuffle it to keep things interesting.
also, if u want to buy off of iTunes, check out the "just for you" section and the top 100 downloaded songs. i've found a ton of great music that way.

You can create a playlist with all the songs you want to be on your ipod then sync that playlist to your ipod and you can also delete songs from that playlist and it will also delete from your ipod when you sync it. You can get great ipod downloads of music and movies at http://www.ipod-vibez.com they have a good list of sites you can use
