The stamps are sold to dealers who sell them on to collectors both in the UK and other countries. The cards are either recycled or some charities make present labels from them and sell them the next year.

I don't know about Christmas cards. My guess is that they get sold to paper recyclers, but I don't really know.

Stamps get sold to stamp dealers who in turn sell them to stamp collectors. Such stamps are often sold under names such as "kiloware" (as they are often sold by weight, so many dollars per pound or kilogram) or "mission mix". The money received from the dealer goes to the charity.

There are people who collects them. The cards and the stamps may be used in scrapbooking projects or other art crafts.
