I tend to not call animal's mating "sex" Since that word is used by humans to enjoy and for pleasure. Animals mostly, with a few exceptionals, "have sex" at a certain time each season.

Females go "in heat" at specific times according to the species, and the males sense this and gather. In the moose, the males go in a "rut", in this they gather and fight for females.

WHich ever males win, mates with the female. This is done by the the male mounting the female. it always happen this way.

I think for mammals, the male mounts on the female most of the time.
