Hellsing was amazing. It only ran for thirteen episodes, but was brilliant. They've just started bringing out OVA's, and there are two out so far.
Another really good show was Elfin Lied. Extremely violent at times, but if you can handle that, the theme of how inhuman humanity can be is very thought provoking. I doubt you'll find this on DVD yet, so you'll need to download a fansubbed version if you don't understand japanese.
I also enjoy Cowboy Bebop. While it has a lot more humour and light-heartedness, it is, at heart, a realistic and gritty take on the not-so-distant future. Not as good as GitS, but worth a watch, all the same.

The following have serious stories, little comedy, lots of actions and drama:
"Wolf's Rain" - A story about a group of male wolves disguising themself as good looking young men, and how they faced the end and the rebirth of the whole world.
"Avenger" - A story about a woman warrior looking to avenge her past misery, she befriended a little cyborg girl and then act as her surrogate mother, and how they faced the remains of a childless humankind on Mars.
"Lunar Legend: Tsukihime" - A story about a vampire woman with her friend who is a high school boy.
"Gunm" / "Battle Angel Alita" - A story about an abandoned cyborg girl.
"Sentou Yousei Yukikaze" - A 'love' story about a young man and his jet fighter with artificial intelligent (no avatar, no full speech interface, just plain basic military appliance type of communication), and how they faced an alien invasion.

"Neo Genesis." It's about the end of the world. Lots of fighting/action. Lots of drama. Lots of questioning about what is going on (subterfuge). But avoid the last episode, because it is rather cheezy. Go straight from the second last episode to the two movies.
The fact that the writer comitted suicide after making the last movie adds to the creep factor.
I'm checking out "Record of the Lodoss War" (got two vhs tapes for 4 bucks!) to see how good it is.

My boyfriend really likes Trinity Blood and Fullmetal Alchemist. Not sure if this helps. But Fullmetal has a great story line. I am pretty sure it was cancelled though, you would have to get the DVD.
