You can trust eBay beacuse you do nothing through them except list your item. Theres nothing to trust or distrust them about.

Paypal you can trust. I will give an example. I once bought an item for $750. After sending the money to the seller, he disappeared and deleted all traces of himself. Since i payed through Paypal, they launched a 30 day investigation. After 30 days, nothing was found, so they refunded my $750 completey out of their pocket. Now that's a company i would trust!

i am an ebayer for at least two years now. so far the main concern should be when you actually purchase something from someone on ebay ASKASASKASKASK as many questions in detail as you can before purchasing. Otherwise from experience you will get some sellers who will shaft you. Depending on how they shaft you you can contact ebay and their collections agency will "handle" matters. my opinion i think the "collection agencys" the mafioso. shhh :)
Seriously on the other part of your question paypal can be trusted, the only thing that i has given me problems is if you change bank accounts its a pain in the butt. Litterally ive spent days on the paypal site trying to figure out how to change bank accounts. And with little or no help from paypal.

yes I do I have been using both of them for ten years now and every problem that I have had regarding fraudulent issues has been taken care of. Paypal is owned by Ebay. Ebay is a corporation so therefore it is out there for profit, meaning they have excessive fees for listing services, but depending on what level you are as a poweseller, you may get decent customer service.

Yes, you can trust them. Just make sure that whenever you are entering sensitive information such as credit card or bank account information, the address bar starts with https (the s for secure).
Word of advice: lately there has been a lot of phishing scam (identity theft) through false paypal email notices. If you get an email that says you've added another username when in fact you haven't, report it to paypal by forwarding the mail to spoof@paypal.com

I have dealt with Ebay and Paypal for over 6 years. Paypal has always been honest with me. Out of thousands of transactions four people have ripped me off on Ebay (not sent items I paid for, not paid for things I sent them) Each time I was able to work with Ebay and Paypal and get my money back or get the issue resolved to my satisfaction.

Ebay has a system of accountability which includes their feedback system -- after every transaction, the buyer and seller are encouraged to rate eachother and the ease of the transaction. People with over 98% good feedback are very reliable -- so reliable that Paypal offers a money-back guarantee on those people. Sellers and buyers on Ebay lose their priviledges quickly if they are ripping people off. There is more risk buying from foreign countries too.
If you are nervous, email the seller and see if you can live with his responses. Selling on Ebay is basically risk free -- you do not have to ship the item until you have received payment.

As for Paypal, I've heard some slander on the net about Paypal ripping people off, but they have been very reliable to me. A friend of mine trusts them so much that he has borrowed $20,000 at 0%APR from his credit cards and invested it in Paypal's money market account at 5%.

Yes, you can. Every time you write a check anyone who handles the check has all your account and routing numbers. And whenever you use your credit card, your number can be swiped or copied by some cashier or waiter.

The safety online comes from the fact that you're one among millions of people and that the companies you give your information want to protect their reputations and therefore will safeguard your info.

The risk in the real world is actually greater than in the virtual (online).

Yep. Paypal is designed to protect the consumer, while ebay is designed to protect the vendor. It's a nice balance. I dont' know if you're trying to sell stuff on ebay, but you can set up your credit card information instead of your bank account. Obviously, you can't set up your credit card info to sell.

Yes, both Ebay and PayPal are very trustworthy, I am a user of both services, and not only do they keep your information secure, but they both have phone numbers/addresses that you can contact, and they WILL support you if you do have a problem.
