Most automatics these days are fill-for-life, but you've got a special situation. The mechanic wants to be sure that all of the particles that may be floating around in the fluid get removed. Now, the filter (which will be brand new after a rebuild) will get most or all of those that are big enough to cause trouble, such as to stick a valve. This is just a precaution, and while it's a little conservative, I don't think it's a bad one. As far as speeds go, don't worry about that. There's nothing to break in. Afterward, just follow the schedule in the owner's manual. Personally, I still change the oil every 100,000 miles or so, just because the additives in the oil get depleted over time, and fresh oil replenishes that and improves the shift quality. It's less noticeable now with the feedback control in modern automatics, so my change interval has increased dramatically over the years.

Necessary not really! In fact I have seen it cause problems shifting if it has never been done, because the new fluid is "thinner" than the old fluid that was removed. The filter should be changes to help performance about every 50,000 miles. But again I have has some cars that I never did either to and have have gone over 100,000 miles.

It is a must to change both the fluid and filter on the transmission not only on an older car.,

It's necessary on any automatic transmission, every 40 to 50,000 miles it should be changed along with the filter.

yes, but it's usually done at a greater number of miles than a motor oil change.(maybe at very 15,000 miles?)
And when you do a tranny fluid change, you also replace the tranny fluid filter.
The reason you need to do it is that small microscopic shards of metal build up inside the fluid. Also, the viscocity of the fluid begins to break down as well.
But, all the old cars I ever own leaked all of it's fluid, I never need to change it.

Yes it is because trans fluid breaks down just like engine oil. This can cause slipping or long warm up times also locking up of the trans. I recommend 12,000 miles or at least once a year. Depends on how much you drive it.

In most cases no, but it does need changing if it is brown in color
It smells burnt
It ( the trans) is slipping
Most trans fluid will last well over 100,000 miles
