The best thing to do is to be completely honest. Gently tell her that you like her as a friend, but nothing more.

you need to be truthful with her now...because everyday that goes by...her feelings are getting stronger for you....and she will fall hard when you tell her...so get it over with...tell her you want to be friends only....
