Just basic courtesy and politeness every human is expected to show to others! Don't we also use the expressions 'good morning' when we start a day, 'have a good day' (or 'nice day') when we leave someone after meeting him/her, or 'take care' or 'thank you', or even 'hello'? These expressions are used even if the person using it is not in proper mood that calls for use of these expressions. We have come to accept these as politeness that is now standard, and help the other party to cheer up a little.

Because you're wish the other person has a good night, not telling them about yours. Just because you've had a rotten day doesn't mean you can't wish someone else has a good one, right?

a good night is a night where you sleep through the night without tossing and turning. it is a night when you are comfortable and don't have too much on your mind.
WHY DO PEOPLE SAY GOOD NIGHT?
people say good night because in saying good night, it is showing the person that you really care about there actions that night.
WHAT COULD YOU COMPARE THE SAYING GOOD NIGHT TO?
You could compare the saying good night to the saying good morning. why do we say good morning? we say good morning so that the other person could have a good morning. we say good afternoon so the person could have a good afternoon. we say goodnight so that the person has a good night!

It's usually said to politely end a conversation before walking away or hanging up the phone after 5PM. If that's not your cup of tea, you could go with "suck it," "no, you shut up," "good bye," "your momma," "the end," or maybe just "later," amongst other things.
